Chitosekan, open since 1877, is a traditional Ryoutei Japanese
restaurant located in Yamagata City, Yamagata Prefecture, in northern
Japan. Yamagata Prefecture is well known for Yamagata Beef, seafood
from the Sea of Japan, and delicious mountain vegetables and fruits.
Chitosekan uses these fine ingredients to provide its patrons with the
art form known as Kaiseki-style cusine. The main building of
Chitosekan has been nominated to be a Japanese national treasure and
continues to be one of the symbolic architectural buildings in the
Yamagata City.
Ryotei is a type of luxurious and traditional Japanese restaurant with
Tatami-mat floors. Ryotei used to be exclusive and only new customers
were allowed by referral. Now, Ryotei restaurants are opening their
doors a little more for others to enjoy. Ryotei restaurants feature
entertainment along with Kaiseki cuisine. Kaiseki “...is a type of art
form that balances the taste, texture, appearance, and colors of food.
... Finished dishes are carefully presented on plates that are chosen
to enhance both the appearance and the seasonal theme of the meal.” (
from http://en.wikipedia.org/wiki/Kaiseki )
Chitosekan’s kaiseki cuisine is influenced by four seasons of Yamagata
and with each season, the layout and dishes served are different! When
visiting, don’t forget to try Yamagata Beef!
